Tunisian Orange & Almond Cake
400g Sugar 300g almond meal 3 Tspn baking powder 400ml vegetable oil 8 eggs Zest of 2 oranges/1 lemon Syrup Juice of 2 oranges/1 lemon 150g sugar 2 cloves 2 cinnamon sticks Method Blend together all ingredients (not syrup) with electric mixer until pale.Bake in a greased and glad bake spring tin. Bake@180c for 50-60mins may take longer use skewer to check. While cake is in oven put all syrup ingredients into pot and bring to the boil then simmer for 5mins.When cake is out of oven spike with skewer and pour over the syrup.Put in fridge for 4hrs or over night. |
